Why not use a dedicated camera?
I have plenty of dedicated cameras. For the last five years I choose to shoot exclusively with my phone. I suspect others may feel similarly.

Shame that they don’t actually play in Dolby Vision when using AirPlay to my 2020 LG CX OLED. Don’t see how I’m meant to watch them

Most won't, but it's kind of cool that you can edit 4K 60fps 10-bit Dolby Vision on your phone. Makes me wonder what these things will be capable of in only 5 years.
Probably capture & edit some amazing footage of people fighting for survival in the post-apocalyptic world.

Not to get cynical immediately, but two questions
1. Was this ad shot completely on an iphone 12? (be cool if it was but doubtful)
2. If you've got a buget for mics, light rigs, miniatures, horses, do yourself a favor and pick up a used EOS or A7iii, even a gopro for under $1k.

I mean, I get the ad, gonna get some peeps into filmmaking but still...
An iPhone is superior to a GoPro IMO
